01 — ABOUT
Not a restaurant. A Ghent house that feeds you.
Devrient was a rope-maker's tavern in 1897, a jazz cellar in the 60s, a print atelier in the 90s. Today we keep all three lives in one building: ground floor brasserie with open fire, cellar brewery for wild and saison beers, first floor atelier for exhibitions, listening sessions and neighbourhood assemblies.
We cook only what Flanders gives: North Sea fish in season, Polder vegetables, dry-aged West-Flemish beef, cheeses from 40 km around Ghent. Bread from our wood oven, beer from our cellar, art from our street.

Three obsessions, one menu that changes with the Lys tides and market mornings at Ledeberg.
Gentse waterzooi, re-fired
Grandmother's stew, finished on embers. Celeriac, mussels or chicken, verjus, smoked cream. Served in the pan it lived in.
Lys Saison & Kriek Devrient
Spontaneous fermentation with cherries from Wetteren. Dry, funky, unfiltered. Poured by gravity in the cellar bar.
Desem from 1911 starter
Our mother dough survived two wars. Dark crust, open crumb, baked twice daily. Take a loaf home from the corner shop.

Three floors, one river
Book a corner for two or the whole house for 180. Every room looks at water or fire.
Rope & jenever
Pieter Devrient opens tavern for Lys boatmen. Soup, bread, jenever.
Jazz cellar
Daughter Mieke turns cellar into Blue Lys — Coltrane on reel, free soup for musicians.
Print atelier
